A delicate and expressive Ethiopian microlot from Dumerso, Yirgacheffe, bringing together elegant floral aromatics, juicy fruit sweetness and a beautifully clean finish.

The Process

This coffee undergoes a K72 Experimental Double Washed process, inspired by Kenya's K72 method.

Using the “Pure Water” washing method, fresh, clean running water is used throughout the washing and soaking stages to help minimise unwanted flavours and create greater clarity in the cup.

The coffee is fermented in washing tanks for 72 hours. On the second night, the fermentation water is replaced with fresh, clean cold water, slowing the fermentation for a cleaner and more controlled flavour profile.

After fermentation, the parchment coffee is spread in a single layer on shaded African raised beds, where it slowly dries for over two weeks.

In the Cup

Expect delicate white blossom and bergamot aromatics, juicy blueberry sweetness and a bright orange finish.
